Purchasing a whole or side of beef is the easiest way to have high quality, locally raised beef available whenever you need it and the most economical way to include organic grass-fed meats as a part of your diet.

We have cattle ready to process this fall and are now taking deposits to reserve your beef. 

When purchasing a side or whole you decide how your beef is cut and packaged, according to your tastes and needs. After you place your deposit we will contact you to put together your custom cut list and can help with the process of deciding what will work best for you and your family.

Your beef will be processed at a government licensed abattoir, each cut labelled, vacuum packed, and frozen.

If you reserve a side we'll contact you about when you'd like to receive your beef and schedule a pick up day from the farm 

 

How much does a side cost?

Cost is $6.50/lb hanging weight.

Industry standard for calculating price per lb is based on the hanging weight or rail weight.- it is what you get when you remove the parts that are inedible like the hide, feet, head, some of the bones and most of the innards. 

This is the weight the butcher charges the cutting and wrapping on and the weight you pay for per pound.  

This price includes taking the cattle to the processor, custom cutting and wrapping and picking the beef up from the processor.

A side of beef is estimated to be between 200 - 230 lbs hanging. 

 

How much do I take home?  

You take home the finished cuts or “yield”. The percentage of the hanging weight that remains is called the “yield” and is generally around 65% of the hanging weight.

Your “take home” weight will depend on the cuts you choose, trim and water loss while dry ageing etc 

For example the more bone-in cuts you choose the closer your take home weight will be to the hanging weight. However you choose to cut it, buying this way  always works out to considerable savings vs. Paying individual cut prices. 

 

What cuts will I get?

The cuts usually consist of 20-25% Steaks, 25-35% Roasts, Stew Meat & Short Ribs, and 40-50% Ground Beef. That means you can get premium cuts such as Filet Mignon and T-Bones for as low as the cost of Ground Beef.

 

After the $100 deposit, the balance for the side of beef is due at time of pick up. 

Balance due will be the hanging weight x $6.50 and less the $100 deposit
